Haihaiiii... Seperti biasa dan mungkin seterusnya akan seperti ini, menceritakann hari-hari saya di blog ini selama saya masih dalam proses belajar di kitchen poltekpar makassar.
07. 20 yah, hari ini saya telat 20 menit dari seharusnya datang jam 07.00, sampai di kitchen alhamdulillah praktik belum di mulai, sebelum praktik kami oneline terlebih dahulu dan mendengarkan apa yang di sampaikan oleh kak alkis, setelah itu kami langsung doing, hari ini materinya adalah european buffet.
Hari ini kelompok kami akan handle dissert,
Dessert adalah sajian yang disajikan diakhir courses dalam suatu set menu yang gunanya untuk menghilangkan kesan rasa hidangan yang terdahulu dan menutup babak penyajian makanan. Sajian dessert sering dinamakan The final course atau The last course dan berasa manis atau disebut sweet Hidangan penutup (dessert) adalah hidangan yang disajikan setelah hidangan utama (main course) sebagai hidangan penutup atau biasa disebut dengan istilah pencuci mulut. Dessert biasanya mempunyai rasa manis dan menyegarkan, terkadang ada yang berasa asin atau kombinasinya. Fungsi dessert dalam giliran hidangan (courses) adalah sebagai hidangan yang menyegarkan setelah menyantap hidangan utama (main course) yang terkadang mempunyai aroma atau rasa yang amis serta menghilangkan rasa enak. Pada awalnya hidangan dessert yang disajikan berupa buah-buahan yang segar tanpa proses pengolahan.
Kemarin kami sudah membuat red velvet,tapi red velvet yang kami buat itu ternyata tdk bisa di gulung sedangkan menu dissert hari ini itu adalah red velvet roll cake, jadi kami harus membuat kembali red velvet, kami segera prepare karna sekitar jam 10 makanan akan keluar, sementara kami prepare, kami dipanggil untuk oneline oleh chef aldino dan selesai menjelaskan sekitar pukul 10.00 yang seharusnya makanan telah keluar, setelah di konfirmasi kembali ke resto di undur ke jam 11.20, kami segera prepare dan red velvet keluar pukul 11.35
12.30 kami mulai gc, dan pulang setelah lakilaki tselesai kajian rutin di mushollah poltekpar.
